
I finally finished my university degree!! Which is incredibly surreal- I still can’t quite believe it.
Three years really has flown by, which I know is what everyone says when reminiscing about university, but it really has. I still remember arriving at university for the first time with all my bags and it all feeling foreign. And although at times it does seem like a while ago, it also only seems like yesterday. It’s an odd feeling because during the grind of exams and deadlines all you can think about is the moment when you’ll finally be finished and free to do whatever you like, and then when it hits, you don’t really know what to do with yourself.
Feeling unsure of exactly what to do with myself, the only thing I was certain of was that celebrations were definitely in order, and what better way to celebrate than with some fluffy American style breakfast pancakes!
I love mixing these up and this time I decided to top mine with some natural Greek yoghurt, fresh summer berries and maple syrup. It’s a combination I really recommend and is really easy to throw together while looking super delicious!
Celebratory Pancakes with greek yoghurt and summer berries
Ingredients
75g self-raising flour
½ tbsp caster sugar
1 medium egg
50ml semi-skimmed milk (or milk of choice)
Toppings
Greek yoghurt
Strawberries
Blueberries
Raspberries
Maple syrup
Instructions
(For 1 stack)
Sift the flour and the caster sugar into a bowl. Crack the egg into the centre- it helps if you make a little well. Mix with a fork or whisk then gradually add the milk until it forms a smooth batter. Heat some oil (sunflower is best) in a pan and add spoonfuls of batter to the pan (as many as you can fit without them joining). Once bubbles start to form in each pancake flip it. Once ready, stack the pancakes and add some Greek yoghurt to the top and the berries and drizzle some maple syrup over the pancakes. Bon appetite!
