
So I’m back from holiday (sad face) and I’m slowly getting used to the realisation that I won’t be waking up and drawing the curtains to find the ocean on my door step or an infinity pool outside. But hey, at least it’s not raining…(yet)!
As the weather is still warm, I’m in the mood for cooling and refreshing breakfasts so I decided an overnight oats bowl would be suitable. I’ve tried a few overnight oats variations as you’ll know, but I wanted to try a completely new version as it’s fun to mix it up every now and then. So I decided to try adding some Greek yoghurt to see if this would make it a) creamier and b) more refreshing- as yoghurt is usually used for these purposes.
The Greek yoghurt has the effect of making the dish slightly tarter, which I actually like, but if you’d like it sweeter simply add a bit more honey or maple syrup to enhance the sweetness, or if you’re wanting to be healthy- just add more fruit!
Chocolate chia overnight oats
Ingredients
1/2 cup rolled oats
1 tbsp chia seeds
1.5 cup cocoa powder
2 tbsp Greek yoghurt
1/2 cup almond milk
1 tbsp honey or maple syrup
1 tsp vanilla extract
Toppings
Greek yoghurt
Strawberries
Cocoa flakes
Instructions
Mix the ingredients together in a bowl and place in fridge overnight. Top with a dollop of Greek yoghurt, strawberries and some cocoa flakes.
