Avocado and pomegranate toast

I love avocado toast. It makes the perfect breakfast, brunch or lunch topped with a poached egg or on it’s own as a light snack. This is a really easy way to have it and makes a change from smashed avo. It looks really pretty too, which may be completely unnecessary, but somehow is all the more satisfying in my opinion!

Avocado and Pomegranate toast

Ingredients

Sourdough bread

Avocado

Pomegranates

Chia seeds

Sesame seeds

Olive oil

Half a lime

Instructions

Chop an avocado in half and peel the skin of one half. Place the avocado face down (the side with the stone facing down) and slice the avocado into segments. Toast a slice of your bread and when it’s ready butter the toast. Fan the avocado slices across the toast. Sprinkle some chia and sesame seeds over the top along with the pomegranate seeds and finish with a drizzle of olive oil and generous squeeze of lime!
