Summer is fast approaching which means salad season is arriving! I love tasty salad dishes in the summer when it’s too warm for cooked meals or big plates of food when you fancy something light and refreshing.
This salad is the same one that I made in the salad jar so you can also make this up as a salad to take on the go for lunch.
The ingredients really work well together and bring out so many delicious flavours. The honey goes beautifully with the halloumi and the lime and pomegranate give it that fresh summer salad feel and really enhance the existing flavours. It’s wonderfully colourful and definitely a salad dish to get excited about. I’m sure it will be appearing on my table regularly!
Halloumi, avocado and pomegranate salad with a honey dressing
4 slices of halloumi grilled
1/2 avocado sliced
Handful of cherry tomatoes chopped
1 tbsp pomegranates
Some coriander chopped
1 tbsp Pine nuts
1 tbsp Sesame seeds
Olive oil- generous drizzle
1 tsp honey
Heat a griddle pan and add a small amount of butter so that it’s lightly greased. Chop four slices of halloumi and then add these to the pan. Place down so that the lines of the pan go horizontally across the cheese slices. When the cheese starts to melt flip to the other side but try not to move it too much in order that the lines from the griddle pan form on the cheese. Add the avocado, cherry tomatoes and then the halloumi to a plate. Sprinkle the pomegranates over the top along with the pine nuts and sesame seeds. Drizzle the honey and olive oil over the salad and add the chopped coriander. Squeeze with the segment of lime and it’s ready to serve!
