
Good morning! I’ve been so busy recently and constantly on the go. So I decided to make some bliss balls (or energy balls as they’re often called) for a healthy energising snack!
I haven’t made these in a while because our old food processor broke. Finally we got a new one which is extremely powerful and has clever little things like in-built scales…I know! So I could finally make some more of these and it was a perfect way to test out the new food processor. They’re so yummy and satisfying too, you only need one or two for a snack.
I’ve also just found out that I will be interning for a month at Food and Travel Magazine, starting on Monday which I’m so excited about. It will be interesting trying to balance a 9-5pm work day on top of recipe and blog updates which up until now I haven’t had to do… (university isn’t exactly 9-5pm), but I will do my best! Anyway time to relax now as it’s my last weekend before I start. Happy weekend!
Raw Cacao and coconut bliss balls
Ingredients
50g hazlenuts
50g ground almonds
100g desiccated coconut
50g raw cacao powder
100g fresh dates
3 tbsp coconut oil
Instructions
Add the nuts to a food processor and blitz until they are ground up as finely as possible. Add all other ingredients and blend until well mixed. Roll the mixture in your hands to make small even sized balls. It should make around 15. Sprinkle with a little extra coconut shavings. Place on a baking tray lined with greaseproof paper and pop these in the freezer for half an hour to set. Then transfer to the fridge and keep them here until they’re all gone!
