Calling all banana lovers! I’ve been super busy and rushed off my feet the past few weeks what with interning, my cousin’s wedding (I bloody love weddings though) and next week I’ll be graduating… !!? How has that come around so fast? Summer seems to be flying by, so I thought it appropriate to get in the summer spirit and make these chocolate dipped frozen banana lollies before summer completely flies by.
They’re super easy and fun to make and look really pretty with all the different toppings! And you can mix up the toppings however you like, I pretty much just scoured the cupboards to see what I could find, and this was the result:
Chocolate dipped banana lollies
3 bananas (for 6 lollies)
100g dark chocolate
2 tsp honey
1 tsp coconut oil
(Up to you what you coat them in but here are my toppings)
Pistachios (unsalted & chopped up)
Walnuts (chopped/ crushed)
Chop the bananas in half across the middle. Stick lolly sticks/ cocktail sticks or whatever you have that will work as a lolly stick (I used some corn on the cob silver stick things) into the banana halves then place in the freezer over night or several hours before. Prepare your toppings- e.g. chop/ crush the walnuts and pistachios and have your toppings ready.
When the bananas have been in the freezer long enough, gently melt the chocolate on a medium/ low heat in a pan then add the honey and coconut oil to the melted chocolate and stir until mixed. Remove the bananas from the freezer. Tilt the pan of chocolate and coat each banana in the melted chocolate mixture (working quickly as the chocolate will start to set on the frozen banana) and then throw on the toppings quickly before the chocolate sets. Do the same to each banana then return the coated bananas to the freezer to set for about 10 mins. Then they are ready to eat!
