A spot of early evening baking. I felt like doing some baking as I had nothing better to do… finishing uni has left me with so much free time! Not that I’m complaining. I find baking is also quite therapeutic so it’s a great thing to do for a lazy evening.
I needed a recipe that I’d be sure to have all the ingredients for so I decided to make some chocolate chip cookies. So here are the cookies I whipped up, and I’ve posted the recipe below.

Dark cocoa and butterscotch milk choc chip cookies
75g butter, softened
40g light brown muscovado sugar
40 g caster sugar
112g plain flour
1 tsp vanilla extract
pinch of salt
100g mixture of Green and Black’s butterscotch milk chocolate and dark chocolate broken up
(Makes about 15 cookies)
Heat the oven to 190C. Line baking tray(s) with baking parchment. Beat the butter and sugars in a bowl until creamy. Beat in the vanilla extract and the egg. Sieve the flour, salt and bicarbonate of soda over the mixture and then mix in with a wooden spoon. Finally add the chocolate and stir until this is spread throughout the mixture.
Using teaspoons, place small amounts of the mixture on the baking trays – make sure they are spaced apart as they will spread out when they bake.
Bake in the oven for 8-10 minutes or until a light golden colour but still soft in the middle. Transfer to a cooling rack once out of the oven.
