Raw vegan chocolate bites

If you’re a chocolate fan these scrummy chocolate bites are the one! They’re super quick to make and involve no baking, just a freezer! I also love this because unlike a lot of baked goods, which usually taste best within the first few days after you’ve made them before they start to dry out or go a bit stale, these stay perfect for ages because you keep them in the freezer until the next time you want one.

The other great thing about them is that they’re actually not that unhealthy… packed with natural sweet ingredients like bananas and dates the only relatively unhealthy ingredients are the honey and peanut butter, but that’s hardly something to feel guilty about. A lot of people turn their nose up at vegan creations worried that this means they won’t contain anything appetizing that’s necessary in baked goods, but these chocolate bites have been a huge hit among friends and family who’ve tried them, and some have even asked for the recipe!

Raw vegan chocolate bites

Ingredients

1 cup pitted dates

1/4 cup walnuts

1/2 cup blanched almonds

1/4 cup cocoa powder

2 ripe bananas

4tbsp unpasteurised honey (strict vegans can use Agave nectar)

4 tbsp peanut butter

1/4 cup cocoa powder

 

Instructions

Soak dates in warm water for 20-30mins, then drain and put dates in a food processor along with the walnuts, almonds, 1/4 cup cocoa powder and blend well. Tip into a 8″ square tin, press down with the back of a spoon. Then blend the bananas, honey, peanut butter and 1/4 cup cocoa powder in the food processor- should make a runnier mixture. Pour this over the base mixture until well covered. Place the tin in the freezer for an hour or the night before. Cut into 16 squares when you take it out. Keep the remaining bites it in the freezer when you aren’t eating them.
